Microwave cooking.

Mini jam / syrup sponge puddings.

Cooking containers: 6 Mini Dishes (small pudding basins, microwaveable)
Cooking time: 5½-8½ minutes
Number of servings: 9


Ingredients:

100grm/4oz margarine
100grm/4oz caster sugar
2 eggs (medium size)
100grm/4oz plain flour
1 teaspoon baking powder
1 tablespoon hot water
9 heaped tablespoons jam/syrup


Method:

Cream the margarine and sugar together until light. Beat in the
Eggs and fold in the combined flour and baking powder. Add
the hot water. Lightly grease the Mini Dishes. Put a heaped
spoonful of jam/syrup in the base of each and fill each three-quarters
full with the mixture. Cover loosely with Cling Film and cook for 3½-5½
minutes on Full Power or until the sponges are set.
Turn out and refill 3 of the Dishes in the same way. Cook these for 2-3
Minutes on Full Power.
Serve with jam/syrup sauce or custard.
