1930 Borwick's Rich Short Pastry


227g (8oz) flour
1 tsp baking powder
142g (5oz) butter
pinch of salt
1 tsp lemon juice and a little water


Pass the flour through a wire sieve onto a board with the salt and baking powder. Rub lightly the butter
into the flour wiht the tips of the fingers. Add the lemon juice and water to form a moderately still paste.
Roll out once. Bake in a hot oven.
